Омекналите зелениши прецедете в гевгир и залейте с ледена вода. Подсушете ги с кухненска кърпа или хартия. Нарежете ситно и сотирайте в масло, заедно с нарязаните зелен лук, джоджен и копър. Добавете сол според вкуса ви. Намаслявате дъното на правоъгълна тава и го покривате с кора, така че краищата й да останат извън тавата. Поръсвате кората с масло и смес от сирене, яйце. Прибавете от сотираните зелениши и завийте краищата като пликче. Отгоре покрийте с втора кора, чийто краища подпъхнете под бюрека и го обърнете, отгоре редувайте отново сирене, яйце и смес от спанак, коприва и зелении. Редувайте този начин, докато корите свършат. В тенджера налейте около 1.5 литра вода и сложете обелените скилидки чесън, морков и нарязана на четири глава лук. След завиране сложете и кюфтетата. Оставете ги да се сварят, а по-късно ги извадете с помощта на решетъчна лъжица. Получения бульон пасирайте до еднородност. В друг съд загрейте масло и запържете 3 супени лъжици брашно. Добавете бульона и разбитото предварително кисело мляко. Бъркайте докато сосът се сгъсти. Подправете с нарязан ситно пресен магданоз и сложете кюфтетата. Подпесете ястието топло.
